This is seriously the easiest crockpot meal ever. EVER! Don't be fooled by the short list of ingredients--I thought that it might be bland and just o.k., but this turned out to be quite yummy! Totally comfort food. We've made it twice now--once with instant mashed potatoes and once with the real thing and although I'll always take the real thing over instant, both kinds were good.
So here it is. Try it out sometime when you know you have a crazy day ahead of you but want a good meal too!
SLOW COOKER CHICKEN AND GRAVY

2 - 3 large chicken breasts
1 can chicken broth
2 packets chicken gravy mix
Cook chicken with chicken broth in slow cooker on low for 6-8 hours. Remove chicken and shred. Pour approx. 2 cups chicken broth from slow cooker into a pan and mix in gravy packets. Heat and stir for a couple minutes, until thickened. Stir in shredded chicken.
Serve chicken and gravy over mashed potatoes. (We also made peas as a side and that went well with the meal.) Enjoy some easy-peasy comfort food, perfect for cold days like today!!
