These are probably the easiest eggs you could ever make (except maybe hard boiled eggs in the oven--also very easy.) But they taste great! We've made them two years in a row for our big Christmas brunch now and both times they met rave reviews so I better put them here since they are a keeper recipe! (This year I baked them closer to 20 min and they were pretty firm but last year they were runnier--good both ways.)
CHRISTMAS BAKED EGGS
(another Mel recipe!)
INGREDIENTS
12 large eggs
3/4 cup whipping cream
Coarse kosher salt
Black pepper
DIRECTIONS
Preheat the oven to 350 degrees F.
Lightly grease or butter a standard 12-cup muffin tin.
Crack an egg in each cup of the muffin tin. Pour a tablespoon of cream over the top. Sprinkle coarse, kosher salt and pepper over each egg.
Bake for 12-15 minutes, depending on how soft/firm you like the egg yolk. (or a little longer) Spoon the eggs onto plates making sure to get all the yummy cream drizzled over the top and serve immediately.
