Spicy Honey Chicken (Crockpot or Grill) and Coconut Rice

We've made this a couple times now and really love it!  Even little Ethan will eat this so it's a winner!  I often swap recipes around with my sisters because we always need new ideas!  I love this because it's so easy and has so much flavor.  I usually serve this with some steamed broccoli.

SPICY HONEY CHICKEN (2 ways)

Mix these together (I often double this so things are saucier):
2 t granulated garlic
2 t chili powder
1/2 t onion powder
1/2 t coriander
1 t kosher salt
1 t cumin
1/2 t chipotle chili powder (or just more regular chili powder if you don't have chipotle)
1/4 C- 1/2 C Honey (depends on version you make)
1T Cider Vinegar

CROCKPOT:
Rub over 2-4 chicken breasts then put it in crockpot and add the rest of the sauce. Cook on low for 5-6 hours. Shred the chicken and serve over coconut rice. (I also used canned chicken in a pinch and just put in the crockpot for a couple hours and it turned out just fine.)

GRILL: Mix dry spices and rub all over 2 lbs chicken THIGHS. Cook thighs on grill for 3-5 min on each side. Make glaze while chicken is cooking by warming 1/2 cup honey in microwave for 15 seconds and then whisk in vinegar. Reserve 2 T. of glaze and brush rest on chicken in final moments of cooking. Drizzle last 2 T. on while chicken is resting.

COCONUT RICE

2 c. white or Jasmine rice (Jasmine is the best!)
1 can coconut milk
2 c. water
1 tsp. Kosher salt
Splash of white vinegar (optional, but it helps with the texture)
2-3 tsp. white sugar
Handful of chopped green onions, plus chopped green onion tops for garnish (we’re using the whole animal here…)
Black pepper to taste

Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed. Allow to stand 5 minutes. Add green onions, black pepper (if desired), and additional salt if necessary.

**I just dump everything in the rice cooker and let it cook and it turns out perfectly.  And then add green onions afterwards.
