I just recently realized this recipe wasn't on my blog! Shame on me because we make this one quite a bit. And for me, making the same recipe more than just a couple times means something! I love it because I can just prep everything at once, dump it all in a pan and serve it in tortillas with toppings when it's done. Simple and so delicious. The chicken doesn't dry out like it sometimes can cooking it on the stove and plus I don't have to babysit it while it cooks. My kids alternate between eating these like nobody's business and deciding they don't like them. Maybe one day they'll eventually decide they love them and stick with that!
OVEN BAKED CHICKEN FAJITAS
(slightly adapted from this wonderful blog)
Ingredients
1 pound boneless, skinless chicken breasts, cut into strips or bite-sized pieces
2 Tbsp vegetable oil
2 tsp chili powder
2 tsp cumin
½ tsp garlic powder
½ tsp dried oregano
¼ tsp salt
1 (15 oz) can diced tomatoes with green chilies (or use 1 can diced tomatoes and 1 can diced green chilies separately)
1 medium onion, sliced
1 large bell pepper, seeded and sliced (Good with half a green and half a red)
12 flour tortillas
Toppings such as cheese, sour cream, and avocado/guacamole - if desired
Instructions
Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
Drizzle the spice mixture over the chicken and stir to coat.
Next add the tomatoes, peppers, and onions to the dish and stir to combine.
Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.
