Gibbs Favorite Fish Tacos

 We combined a couple recipes to make our fav fish tacos!

GIBBS FAMILY FAVORITE FISH TACOS

Ingredients:

2 lbs tilapia
3 Tbsp. extra-virgin olive oil
3 tsp. chili powder
3 tsp. ground chipotle chili
3 tsp. ground cumin
1 1/2 tsp. kosher salt
corn tortillas

Sauce:

½ cup sour cream

½ cup mayonnaise

3 tablespoons fresh lime juice

1 teaspoons sriracha sauce

1 teaspoon garlic powder

Toppings:

finely shredded cabbage

fresh cilantro

diced avocados or guacamole

pico de gallo or mango salsa

Cotija or queso fresco cheese

lime wedges

Combine spices and rub all over tilapia. Cook on well greased or parchment paper on cookie sheet. 

Bake at 425 degrees until done (flakes easily with fork).

Warm corn tortillas--we like doing this on the open flames of the gas stove, or on our cast iron pan.

Combine ingredients for sauce and keep refrigerated (can make this ahead)

Prep toppings.

Combine some fish and sauce and whatever toppings you want in a corn tortilla and say YUM!
