Hey, what do you know? This picture turned out pretty good!
If you are a chocolate-peanut butter combo addict, like I am, then this is a dessert for you. The bars are rich and have a good balance of peanut butter/chocolate flavors. Yummy! This recipe makes a ton--a whole cookie sheet full--so be sure and share with neighbors so you don't gain 20 lbs. and blame it on me.
PEANUT BUTTER FINGERS
(from my mom)
Ingredients:
1-1/2 cups margarine or butter
1 cup sugar
1-1/4 cup brown sugar
1 cup peanut butter
2 large eggs
1-1/2 t. baking soda
1 T. vanilla
3/4 cup flour (may need 1/4 cup more)
3/4 t. salt
6 cups oats
Topping: peanut butter, 1 pkg. chocolate chips
Cream together first 4 ingredients and then beat in eggs. Mix in rest of ingredients. Spread on a large baking sheet or 2 cake pans. Bake at 350 degrees until light brown (the recipe says about 12 minutes, but it's taken me more like 20 min.) or use toothpick test. When still warm, spread a thin coat of peanut butter over the top. Then pour chocolate chips on top and melt (I usually just put it back in the oven for 30 seconds or so). Spread melted chocolate over the top. Enjoy!

Sam doesn't let me make stuff like this because I'll eat the whole pan myself... within a week.. : )
